The kind messages keep coming in and honestly they make my whole Sunday. Knowing this little newsletter is taking the "what's for dinner?" stress off your plate is exactly why I started it, so thank you, thank you, thank you. 🤍

This week's menu is one I am really proud of. We've got bold, exciting flavors every single night — miso, chipotle, fresh spring herbs, fennel — but every technique is simple and totally weeknight doable. Sheet pans, one pots, quick salads. You've got this.

⚠️ One heads up before you scroll: The cod for Monday's meal needs to marinate in the fridge overnight, so pop it in a bag with the marinade today before you go to bed. Fifteen minutes of Sunday prep = the most effortless Monday dinner. You're welcome. 😉

Marinate this tonight! This one is so good it almost feels like cheating. The miso marinade does all the flavor work while you sleep, so come Monday night it's just a quick sheet pan situation — everything onto one pan, into the oven, done. The cod gets this gorgeous caramelized crust and the broccolini roasts up perfectly alongside it. Minimal effort, maximum payoff.

Taco Tuesday just got a serious upgrade. The chipotle sesame adobo marinade on this steak is smoky, a little spicy, and the type of sauce you're going to want to use for everything — and it comes together so fast. It's definitely one of my absolute favorite taco recipes on the blog ever. Load it into warm tortillas and Tuesday night feels like a celebration!

One pot and a bowl that tastes like spring? Yes, please. If you know me, you know I am a soup-year-round kind of gal. This minestrone is packed with fresh green vegetables and herbs, making it bright and light in a way that feels nothing like your typical soup. Perfect for a Wednesday night when you want something cozy but not too heavy.

You'll still have some miso paste leftover from Monday's dinner, so why not repurpose it? This spicy miso chicken salad is big on flavor and barely any work at all. The miso chicken mixture is bold, punchy, and it comes together very easily. Think of it as your favorite flavor-packed lettuce cup in the form of a family-friendly salad! 😄

End the week on a high note with this incredible pasta dish. Ground lamb and fennel is one of those flavor combinations that sounds fancy but is incredibly easy to pull off. Tossed with a short, thick-cut pasta, it becomes the kind of Friday night dinner that makes you feel like you really went for it. Pour a glass of wine and enjoy the moment. You might even want to invite a few friends to share this one with you! 🍷
