I love coconut shrimp as much as the next gal, but I'm not exactly a fan of the process of breading and frying each shrimp. It's messy and frankly, who has the time?! This weeknight-friendly version gives you all the same vibes as the tropical dish without all the work.

Meet the cover star! Think of this recipe as your favorite game day wings, deconstructed and served in a family-friendly format (complete with Brussels sprouts and lots of fresh herbs for a pop of green).

You simply cannot go wrong with this recipe. It comes together all in one skillet and takes just 30 minutes (I swear!). And once you try the spicy-yet-sweet orange sauce, you're going to be dreaming of all the ways that you can use it.

An old-school recipe with a Tex-Mex twist, this one-pot pasta is on regular rotation in my house. My girls love itβ€”and I love that it's so much easier than making enchiladas!

An easy sheet pan dinner that has me dreaming of sunbathing along the Mediterranean coast! I love the slightly earthy, rich flavor from ground lamb, but feel free to make these with ground beef.

I've published four cookbooks, but this is the first time I've ever included a breakfast section! I know a lot of you find yourselves stuck in a breakfast rut, so I'm here to tell you that these make-ahead, protein-packed sandwiches will save the day!

I love a good tuna salad, and this is my ideal recipe. There's nothing too crazy about itβ€”it's just really good quality tuna, some crunchy veg, fresh herbs, and lemon juice for brightness.

If you have leftover coconut from the Coconut Shrimp Bowls, use it for dessert! This is a better-for-you alternative to the fun-size candy bar that you know and loveβ€”and I promise it will satisfy your sweet tooth!
