I always like to cook fish on Mondays so that it’s still fresh after I buy it over the weekend. Plus, I like that it feels nice and light since I admittedly tend to indulge a bit more over the weekend. This recipe is so simple — and my kids love it because the couscous is reminiscent of Rice-A-Roni! Yum!

If it ain't broke, don't fix it — and that's especially true of this taco soup recipe. I've been making this one on repeat a lot on Tuesdays because I can make it in the slow cooker! Since Winnie usually has a soccer game on Tuesdays, we come home after her game and DINNER IS DONE. Plus, it makes for great leftovers for lunch the next day for me and Clayton.

I love doing an easy stir fry on Wednesdays and this one is so dang good. Sweet potato noodles are tossed with cooked ground chicken, sautéed veggies like bell peppers and scallions, and an umami-rich sauce. I truly can’t stop thinking about it and making it!

I don't know about y'all but when Thursday rolls around, I'm feeling totally uninspired about what to cook for my family, so I always keep it super simple. This one-pot pasta is a 10/10 for the whole family.

We made it though the week! I love to pour myself a glass of wine and make something a little fancy to celebrate. These lamb chops couldn’t be simpler to make, but I love that they still feel special. The arugula pesto brings such a springy flavor to the dish while still keeping it easy enough for an end of week meal. I like to serve these chops with some grilled or roasted asparagus and my Greek-Style Potatoes.
